Quick Reminder: What Is Level 4?

Level 4 food must be:

  • Smooth and lump-free
  • Thick enough to hold its shape on a plate
  • Not sticky
  • Served with a spoon (not drunk from a cup)
  • Able to pass the fork drip test (no liquid drips through)

If the food doesn’t meet these criteria, it’s not Level 4. Adjust the texture before serving.

Bread doesn’t puree well on its own. Instead, use it as an ingredient — make into breadcrumbs and blend into sauces, or use in dishes like fish pie where it’s combined with other ingredients.

Can I eat salad?

Not as a traditional salad. But you can puree salad ingredients — blended tomatoes (sieved), pureed cucumber, or avocado all work. It just won’t look like a traditional salad.

What about spicy food?

Spicy food can be pureed just like anything else. The question is whether the resident enjoys it. Check their preferences and dietary requirements.

Can I eat takeaway food?

Some takeaway food can be pureed (curries, stews, casseroles). Others won’t work (fried food, pizza, burgers). If you want to offer variety, choose dishes that are already soft or saucy.

How do I make pureed food look like the original?

Use food moulds shaped like chicken, fish, or vegetables. Keep components separate on the plate. Add colour and garnishes. It won’t be identical, but it can be recognisable and appetising.

Is a Level 4 diet nutritionally adequate?

It can be, but residents may need help getting enough calories and protein. Add butter, cream, cheese, and protein powder to boost nutrition. Work with the dietitian to monitor intake.
